Tequila Lime Shrimp
Serves 4 as a main course; 8 as an appetizer.
Pairs perfectly with Legoe Bay Chardonnay.
2 lbs. large(12-15 ct) wild caught prawns
1/3 cup olive oil
½ cup tequila
Juice of one lime
¼ cup chopped fresh basil leaves
¼ cup chopped fresh cilantro
3 cloves garlic, minced
½ teaspoon red pepper flakes
1 teaspoon coarse ground sea salt
½ teaspoon coarse ground black pepper
In a large bowl, whisk tequila, olive oil, and lime juice. Blend in all of the remaining ingredients. Toss shrimp in the marinade. Cover and refrigerate for one to four hours.
Preheat grill to medium high (approximately 375º) Remove shrimp from marinade and grill them for 5 minutes with the lid closed. Turn shrimp
and grill approximately 3-5 minutes more, until bright pink and firm. Do not overcook!
Cool and arrange on platter, garnish with coarsely chopped cilantro if desired. Serve with a bowl of your favorite seafood cocktail sauce.
